Banana Cream Pie

5 Tbsp flour
½ tsp salt
2 Tbsp butter
½ cup sugar
2 cups milk, scalded
2 eggs, separated
½ tsp vanilla
2 or 3 well ripened bananas
Baked pie shell
 
Mix flour ½ cup sugar and salt in top of double boiler. Slowly stir in hot milk and cook over direct heat til mixture boils and thickens, stirring constantly. Stir a little of mixture into well beaten egg yolks and pour back into filling. Cook 2 minutes. Remove from heat, add vanilla and cool til just warm. Slice bananas and put in pie shell. Pour filling over. Beat egg whites til stiff and add sugar and some vanilla. Put on filling and place in 400º oven for about 8 minutes.
