dried pinto beans
salt
pork,
bacon or ham bone
water
to
fill pan about an inch from the top
Wash the beans
thoroughly, removing rocks. Put beans in a
big pot. Add salt pork, bacon or ham bone. Cover with water to within
an inch
from top. Cook over low heat until tender and the juice is soupy—about
5 hours.
Add water as needed. Season with salt when done.
Best brown
beans in the world. Must be eaten with
cornbread, coleslaw and a thick slab of sliced onion. Down home cooking
at its
