I first baked chocolate
chip
cookies in Wash DC in
the 40s.
2¼ cups
flour
1 tsp
baking soda
1 tsp
salt
1 cup
(2
sticks) butter or oleo, softened
¾ cup
sugar
¾ cup
packed brown sugar
1 tsp
vanilla
2 large
eggs
2 cups
choc chips
1 cup
chopped nuts
Combine flour, baking
soda and salt in small bowl. Beat
butter, sugars and vanilla in large mixer bowl until creamy. Add eggs
one at a
time, beating well after each. Gradually beat in flour mixture. Stir in
choc
chips and nuts. Drop rounded tablespoon onto ungreased cookie sheets.
Bake 9 to
11 minutes in 375º preheated oven, let stand for 2 minutes, remove.
This was one
of many great treats that we were
lucky enough to have for our school lunches—and we had something
special every
single day. In my memory, Mom always baked Chocolate Chip Cookies for
the first
day of school. Today, I still insist on having them each year when
school
starts. Mine never have turned out like hers, but they’re a hit all the
same.—Keith
