Cream Pie

¼ cup
flour
½ cup
sugar
¼ tsp
salt
2 cups
scalded milk
3 eggs,
separated
2 Tbsp
butter
1 tsp
vanilla
½ to ¾
cup
coconut
Mix
flour, ½ cup sugar and salt in double boiler. Add
scalded milk and stir well. Cook til thick and smooth, stirring
constantly.
Beat egg yolks, mix with some of the filling and add to rest of
filling. Cook 2
more minutes. Remove from heat. Add coconut, butter and vanilla. Put
filling in
8 or 9-inch baked pie shell. Make meringue with egg whites and sugar,
put on
pie, sprinkle with coconut and put in 350º oven 12 to 15 minutes.
By far my
favorite of Mom's pies. For
several years now, she has been making this for me on my birthday
instead of a
cake. In fact, this year she even made it sugar free and it was
still
