Fried Apricot Pies

My mom made a lot of dried apple ones as her father, my grandpa Allison dried apples in his apple dryer.
 
Cook dried apricots in water and add sugar to taste. May also use dried apples. Make pie crust and cut in 6- or 7-inch circle for each pie. Put fruit on ˝ circle of pie dough. Moisten edges with water and fold over. Use fork to seal edges. Fry in oil til golden brown.
 
These are just delicious. I remember coming home from school and being greeted at the door with the great smell that permeated the house!—Keith
