Raisin Pie

2 cups
raisins
2 cups
water
½ cup
sugar
2 Tbsp
flour
½ cup
chopped nuts (optional)
3 Tbsp
lemon juice
2 tsp
lemon rind
Cook 2
cups raisins covered til tender about 5 minutes in 2
cups water. Add ½ cup sugar and 2 Tbsp flour. Mix flour and sugar and
then add
to raisins. May add ½ cup chopped nuts, 3 Tbsp lemon juice, 2 tsp lemon
rind.
Put in crust and top with another crust. Bake at 425º for 40 minutes.
