onion, chopped

grated longhorn cheese

enchilada sauce
1 can
El
Pato sauce – for mild dish use can tomato sauce
4 Tbsp
oil
Salt to
taste
Cut tortillas into small
pieces with scissors or tear with
hands. Heat oil in large frying pan. Add tortillas and onion, sauté for
few
minutes. Add enchilada sauce, El Pato sauce and 2 cups cheese, stir and
cook
for few minutes. Place in a baking dish and spread with rest of cheese.
Bake 20
minutes at 350º. I use enchilada
sauce from recipe here.
